My first character will be a Breton female. She will most likely be a reincarnation of my first Oblivion-character and look a little like her.
My first characters in RPG-games are usually a jack-of-all-trades that roams around poking their sword at anything that moves, testing the world and getting a feel of it.
When that character has tested the waters for a while I'll make a new one and RP with him/her.

i like to play as a stealthy type. and a spell caster type at the same time. so i usually end up being some sort of assassin conjurer. i will surely have illusion, conjuration, marksman, restoration, and alteration, for some of my major skills. and i will be either a dark elf, or a high elf. my name will be either Nevi, Nevigrofnu, Farfalle, or Able. my play style for dungeons, and pretty much any other combat situation, is fairly simple. sneak around invisible, or under chameleon effect.(i like chameleon better) shoot my bow at foes, quickly cast a beasty.(or vice, versa) and watch the beasty go to work, while continuing to lurk, and attack in the shadows. then use my melee skills, or a destruction spell to finish off said foes. also my first order of business will be to challenge my skills in the arena. where clearly sneaking wont be very useful. but it will allow me to gain ranks in some other combat related skills, such as a melee weapon, an armor type, and the block skill. this is where i like to use my non-major skills, to bring them a bit more up to par with the major ones. then i will pick up a few quests, do some dungeon delving, and search out the assassins guild/dark brotherhood/morog tong.
however i will also try hand to hand, just to see how it is. hopefully its good this time around.

I think I'd make my character a Male, 43 years old Wood Elf coprophiliac, Roaming Cyrodil looking for feces to eat and smear over my body.

I have not read very much info on the Elderscrolls V game because the tention would drive me insane, but i would make a mage type breton dabbeling in the arts of necromancy and who's only
ambition in life is to gain power, power! POWER! but ofcause he just seems a normal mage to others. he will probaly be named Barnabas Saul
