Ive literally cleared my Data folder and still a little message appears in the top left of my screen on load up titled ENB Series v.75. Im not sure what mod this is from, if its actually doing anything and where I can find it to delete it.

That one is from the FNV Enhanced Shaders mod. It's not located in the Data folder. You have to install it directly to the Fallout New Vegas folder. If you want to uninstall it, you need to delete all associated files from the Fallout New Vegas directory. If you simply want to disable it, look for d3d9.dll and change its name to something else.
