I've always been tempted to try out Morrowind Enhanced but I heard differing sides of it. Some say it's fine, other people say it corrupts your saves. So, what is the general consensus of using it? :S

Based on discussions I've read on the forums and personal experience, I'd say it really varies person to person.

For instance, I used to use MWE but after hearing about the problems with it I stopped using it, as a result my game became more stable.

There are a few MWE mods, such as combat enhanced, journal enhanced, and writing enhanced (I think that's the right title?) that there are no non-MWE alternatives to, but if you've never tried them then you won't miss them by not playing with them. They are certainly very good mods, but not essential.

Anyways, this is my opinion. As I said some play with MWE and have no problems, some report MWE making their game unstable and corrupting saves, it really depends on the player.
