I'm pretty new to the whole 3D modelling thing, and I was wodering how many faces should I have?
I noticed, while modelling, I had quite a bit, and I dont want to go through the process of making a detailed model, just to have to do it all over again.

It all depends on what you are modelling. Modern numbers state that a character can have up to 10000 polygons (faces) as you call them, while a maincharacter can have up to 15-20000 polygons. The classic number for a only the head was to be a maximum of 1000 polygons. IIRC Better Heads weight in at about 300 polys or 500 tris.. Don't take my word on that one tho.
As for environment and such one have to concider that MW needs to make up for detail that it looses because it can not make use of current generation technology and therefore we can allow ourselves to put a bit of crazy detail but the lower is always the better.
There are ways to think to maintain a good polyflow that will show the detail you want and still be pretty much as optimal as possible. It's not something that can be taught I think It comes with experience. So practice and have fun with it!
