Jeez. If you hate bugs that much, don't try out Ubisoft games lol! All games got bugs at launch, what's important is how fast they're solved.
How many threads are we going to have discussing the same pessimistic topic? This has to be at least the third one in two weeks time. The search function exists for a reason.
The unofficial patch DID introduce some bugs in several versions....the implication that modders are infallible and the Developers are inept is just silly. In ANY piece of software this complex, there WILL be issues that will get missed and need to be fixed. Nobody is bashing the modders that work on the unofficial patch, but they ARE capable of making errors....and have.
This entire topic is like asking if you plan to take the day off from work if it's raining tomorrow (or the next day)? Life's not perfect, deal with it.
There are bugs and bugs.
If dragons occasionally fly backwards, it doesn't break the game.
I've never experienced a Bethesda game with a truly game breaking bug.
Most other stuff can be dealt with.
I had a couple of questline breaking bugs. For the Companions IIRC. That was pretty bad. I had to restart after 50 some hours.
Probably 800-1000 hours in FO3 and have never experienced a game breaking bug. Never really have had anything that I'd even call an annoyance. At least that I can remember
I seen that many of times, using mods and strange bizarre things in fallout 3 like falling through a interior when i loaded into a building and just fell off in to a big old dust box.
They do that sometimes, also their skin will start coming off and they still be flying around the sky as a bone dragon.

Had a few glitches at Fallout 3 launch, and again with Skyrim but nothing game breaking, but in Fallout New Vegas i had the long drooling face of the doctor at the start and his spinning head also made an appearance once or twice, so no idea about the majority of peoples issues what they experienced during Fallout 3 launch or Skyrim that might have been semi game breaking or immersion breaking for their experience, but later on after 1 patch i had a memory leak issue in Skyrim that seem'd to either get worse or appear did not play it for very long at a time, Fallout 3 i had issues due to mods and being a bit daft at putting them into use, i am quite incompetent when it comes to the more demanding mods to implement into my games i need a how to mod for dummies badly.
Same deal with the newest Batman Arkham knight also 1 of the few lucky ones to avoid big game breaking glitches in that game, but then again not everyone escapes the bug madness, all i can say is i have experienced very few game breaking bugs with Bethesda games over the last 10 years time or so from launch if any that i can remember at this time.
And if the game arrives and is bug infested, well i will deal with it at that time, but not worried about it having enough bugs to have that mass recall like thing they did with Batman Arkham Knight or anything close to that, since they are currently bug hunting quite a bit from what we understand with some interviews about the games final polish stage and the start date of that.
Like others have said no game is 100% bug free at launch, and not every single pc is running same specs or drivers, so we will have people on the boards complaining about fixing your damn game and all their usual impatient attitude to a problem.
