For well known games Jeremy Soule composed for Total Annihilation, Dawn of War (not the expansions), Morrowind, Oblivion, Icewind Dale, Knights of the Old Republic and Neverwinter Nights as well as its expansions. Mark Morgan composed the music for Fallout, Fallout 2 and Planescape: Torment. Jack Wall composed the music for Myst III, Myst IV, Jade Empire and Mass Effect. They've all done others, but those are the only well known scores I can think of off the top of my head.
Inon Zur composed the music for Baldur's Gate II: Throne of Bhaal (which was actually pretty good, his best work IMHO), Icewind Dale II, Fallout Tactics, Fallout 3 and Dragon Age.
