You would have to use a Windows Emulation program to play...New Vegas will not run on a Mac OS.

It uses directX man, a window's exclusive graphics framework. It doesn't have a chance of working on a Mac, and to get it working in an Emulater would likely be a relative form of hell, speaking as someone who's tried to use a full *nix(Linux in this case, but the same hold true for Macs given that they are a *nix flavor) box and still game before.

Install bootcamp and a copy of Windows (you'll have to buy one if u don't have it) then you can play it. When you boot, your mac will let you choose between booting OSX or Windows. This way you can run all games and stuff the same as a Windows machine. I did it on my Macbook pro with WinXP and didn't bother going back to MacOS afterwards.
