Have any dedicated Fallout fans ever tried to remake Fallout 1 or 2 in the current Fallout engine? It'd be amazing to have something like that getting a lot more people on board and "playing" the older Fallout games.

I'm no expert on mod creation but that sounds like an enormous amount of work and would likely require a dedicated team and a couple years worth of time to create. The older Fallout games aren't that hard to get into and are pretty cheap these days and anybody looking to play them easily can. However, that shouldn't stop people from trying to recreate the older games if they really want to.
Half of the effort would be the voice acting. Without voices it'd take probably only ... *beep*calculating noise* ... 2,47 years. Give or take.
Although, I do understand your concerns with time, much larger mods have been created for much more complicated games. That being said, I think the only people really willing to take on a project this large would be Bethesda themselves (and their employees are getting paid, obviously).
Well, I imagine there would be more people willing. But it's such a huge undertaking that the chances for it dying halfway would be big. Only a really dedicated team could pull this off.
That said, if it existed, I'd certainly play it.
Yeah they did a demo of the Radioactive Caves from near the beginning, it was beautiful, but the amount of work involved to redo the whole game would be huge.
