Do I need to install any additional official patches for any of the three games in Fallout Trilogy (mine is the US version) or are they already patched to the latest version?

They are already patched. Applying other patches may cause problems.

For the Canadian/French version, there is a patch for some missing audio files:

My goal is having the latest official versions of all three games without any fan made stuff. I see there are some Direct Draw patches offered for Fallout and Fallout 2 during installation. Are these official (from gamesas) or community made? I don't remember seeing them anywhere before.

Those are community made.

You'd be a fool imho to ignore Team X's fallout 1 patch
Killap's R.P. package for fallout 2
and Sfall for both of them as well as a high res pack.
