When my friend first told me about Morrowind in 2002 or 2003, I was pretty meh about the whole thing. I borrowed his disc, booted it up, and thought that Jiub looked stupid. Then I walked out of the ship and was confronted by a legionary in Roman-styled armor, and was sold. I immediately went to the store and bought my own copy, and have been committed ever sense. . .
This was another reason why I was so annoyed with Oblivion, because it replaced "ancient Rome in a jungle" with "generic English medieval countryside." Skyrim has restored things to the way they ought to be: the artbook specifies that Imperials were designed with classical features in mind, with tanned Mediterranean looks, and their armor is absolutely Roman once more, down to the hobnailed boots (what a fine detail!).
That said, I find the Dunmer fascinating culturally (who couldn't, after Morrowind?) as well, and loved their antagonistic relationship with the Imperial colonizers who still helped them suppress the Ashlanders.
edit: Also, the racist Temple guys in Morrowind have great descriptions for every race but the player's--I love them because they're essentially reworded from the generic race description you get from everybody else, but to maximize pejoratives.
