I feel like while all the races are great in their own way, there are a few too many human races. Altmer make good mages, Bosmer good archers, Dunmer are good jack-of-all-trades; Orcs are great berserker warriors, and Khajiit and Argonians are fun for roleplaying purposes, especially in Skyrim. The human races, however, are a little less useful per race, it seems. Redguards and Nords are both warrior races, but their racial abilities are just okay. Imperials are really only good if you like speechcraft, and Bretons are only good if you want to play a magic-oriented character build, but don't want to play an elf.
Now don't get me wrong, my first character playthough is always a Breton (the closest thing in TES to a half-breed, with ancestral ties to the original Aldmeri elves), and I do like to play a human battlemage. But I rarely ever play an Imperial, or a Nord, and I've never played a Redguard in all my playthoughs across Morrowind, Oblivion, and Skyrim (so far). Might change that, now that some Redguard culture is more readily available in Skyrim, but it'll likely be the last race I'll have remaining to play as.
