Yes, I have played them all exept Daggerfall. I understand not eveey Khajit in the game is a trader, but I have never seen one that isan't, so it must be a good 70%.
Wanna' prove me wrong? Then acually link a few Khajits that arn't traders or travelers.
You played Arena, but not Daggerfall?
Anyway, if you go back to the previous games, you'll see almost every khajiit is either a member of the thieves' guild, skooma addict, or a servant of some kind. (Some are fighters' guild, where they are "monks", which means unarmed combat, back when there was a skill for it.) In fact, I'd ask you to find khajiit from previous games that WERE traders.

Khajiit are also extremely common as generic bandits and highwaymen in Oblivion.
Conversely, here are the actual khajiit merchants I saw in Oblivion:
http://www.uesp.net/wiki/Oblivion:Talasma - runs an inn
http://www.uesp.net/wiki/Oblivion:Shuravi - also runs an inn with two sisters, below
http://www.uesp.net/wiki/Oblivion:Shamada
http://www.uesp.net/wiki/Oblivion:Shomara
These are sort of businesspeople, but don't actually run a business:
http://www.uesp.net/wiki/Oblivion:Ra%27jiradh - and two brothers run the newspaper
There are other Khajiit in Oblivion, but this gets tedious, and people would complain if I didn't mention Morrowind, too. (Look here: http://www.uesp.net/wiki/Category:Oblivion-Khajiit for full list)
So, Morrowind. Most Khajiit in this game are actually just slaves. And by "Most", I mean roughly 90%.
(Basically, look here: http://www.uesp.net/wiki/Category:Morrowind-Khajiit ) These characters often don't have their own pages.
Slaves:
Tsabhi
Ekapi
Abanji
Khamuzi
Affri
J'kkara
Ma'Dara
Aina
K'simba
Ri'dumiwa
Man, there's too many, I'm skipping the rest of these, but basically, pick a slaver den, and there's probably three khajiit and three argonian slaves.

http://www.uesp.net/wiki/Morrowind:Dro%27zharim#Dro.27zharim
http://www.uesp.net/wiki/Morrowind:Dro%27Shavir#Dro.27Shavir
Merchant (All these merchants deal in moon sugar and skooma, despite being illegal, making them basically drug dealers):
http://www.uesp.net/wiki/Morrowind:J%27Rasha - spell and alchemy vendor
http://www.uesp.net/wiki/Morrowind:Jobasha - bookseller
http://www.uesp.net/wiki/Morrowind:Ra%27Virr - weapon vendor
Again, I'm not going through all of these, I took a large enough representative sample of random names, and again, well over 90% of them are slaves, anyway.
====
So out of the hundred or so randomly selected characters I looked at, 7 were merchants, and three had a psuedo-mercantile job. That is a hundred or so characters I looked at without including the roughly 80 slaves from basic Morrowind, since they obviously have no choice in their profession. Again, the common profession for these characters are some variation of thief or assassin or bandit, with occasional monks or the like thrown in. There is a much lower percentage of their race that are merchants (even excluding slaves) than what other races boast.
Facts: You lack them.
