Bearing in mind the HUGE number of exploits that were available in Oblivion, what do we know about changes in Skyrim that will remove any or all of these to make the game more of a genuine challenge?

No athletics, no acrobatics and no spellmaker for starters.

Games always have exploits when they're first released. Since we don't know what the exploits may be in Skyrim, it's impossible to know how they'd be "fixed" already.

True. But, we also know that there are a whole load of changes in the way that we will play Skyrim, and a lot of these are bound to have an impact on many of the exploits in Oblivion and other previous titles. For example at the higher levels in OB, you could pick any cave with a group of bandits in it, kill them, take their glass/daedric armor and effectively have an infinite supply of gold to buy whater you like by revisiting the same cave every 3 days.

No backwards running, although in the demo the character looked like he was quite fast while backpedaling . I think they also said that you can stumble and fall if you get hit while backpedaling.

And what JOG said, no spellmaker. That means most likely no weakness stacking possible.

That's all the exploit fixes I know about so far.

He was obviously talking about the gazillion exploits that were present in Oblivion.

"Say Once" flags on INFOs which grant the player a reward so you can't collect over and over.

Example: Garrus Darelliun at the end of "Corruption and Conscience" in Oblivion.
