Better Bodies and Better Clothes for one. Even for its time, the character models looked like emaciated ps1 stick people with jagged skin.

Khajiit and Argonian bodies aren't effected by better bodies, but Liztail (his name changed, but I forget to what...) made some nice ones here:

Morrowind Code Patch project is also great, fixing all sorts of irritating bugs and whatnot. Enchant is actually worth it here (since the fail rate is ridiculously high in vanilla), but its far too easy to sell it for oodles of cash (which means nothing once you reach level 12 or so with the equipment you'd have gotten by then...).

If you like vampires, Vampire Embrace by Cortex is a must (as being a vampire in vanilla Morrowind is not just difficult as no one talks to you as a vampire, but hardly even worth the trouble of getting infected as you would HAVE to get cured to continue the main quest). On the other hand, you will be quite powerful (at least, as long as you're not fighting outdoors in broad daylight...) and have lots of followers who will happily wreck stuff for you... Just keep this mod in mind when you feel like harassing the populace of Morrowind:

Book Jackets is a nice touch for those who like reading or collecting books (especially with book rotate so you can sit the books on shelves)L

Oh, I forgot: A lot of mods are on Planet Elderscrolls, which says you have to pay to register. You don't. Same with Fileplanet, which requires a separate login to download the files. It's kind of hard to find, so let us know if you can't find the free registration (the paid puts you first in line for mods, but Morrowind doesn't get long mod lines, despite having a massive selection on the site...).
