The best gladiator game I have ever played is Colosseum: Road to Freedom. It's only on the PS2.
The plot takes place in a slice of real actual Roman history regarding the in-house coup against the bat-crap-crazy emperor Commodus. The game doesn't keep to the strict gladiator themes (fighting styles and equipment themes, ie. hoplomachus vs. murmillo), so you can equip whatever you want, fight however you want, and face opponents that have any fighting style and equipment. Other than that, it's pretty darn awesome and really tries to stay true to historical accuracy.
