Quite a few good suggestions already on the RPG side of things, so I'm going to branch out a bit into good old games in other genres (although I reserve the right to still recommend a few RPGs as well).
http://www.gog.com/en/gamecard/master_of_magic (TBS): Plays somewhat like the Civ series (in a fantasy setting), but with tactical battles and lots of magic. Huge variety of possible strategies offering lots of re-playability.
http://www.gog.com/en/gamecard/freespace_2 (Space sim): Arguably the definitive space combat game. The base game is excellent on its own, and a strong modding community has made available lots of excellent additional campaigns (be sure to grab Freespace Open).
http://www.gog.com/en/gamecard/gothic and http://www.gog.com/en/gamecard/gothic_2_gold_edition (RPG): Open-world, third-person (OTS) RPGs. Decent characters and story, but their strong point is the challenge of surviving and working your way up in a world fairly hostile to you, with a great feeling of accomplishment and progression as you move through the games. Must-play games for those who enjoy open-world RPGs.
http://www.gog.com/en/gamecard/heroes_of_might_and_magic_3_complete_edition (TBS): The HoMM games are a definitive entry in the TBS genre, and HoMM3 is argued by many (myself included) to be the best of the bunch. Definitely an essential for anyone who enjoys strategy games.
http://www.gog.com/en/gamecard/psychonauts (Action adventure/3D platformer): In terms of mechanics Psychonauts is a decent enough action adventure/platformer, but really shines in excellent level design and incredibly well-written (and very quirky) characters. Basically the game is just plain fun to play, and is recommended regardless of whatever your normal genre preferences are.
http://www.gog.com/en/gamecard/sanitarium (Adventure): Gameplay is pretty standard for adventure games and in the Lucas Arts style (meaning no death and you can't make the game unwinnable), and the puzzles are generally well thought out and challenging without being horribly difficult or obscure. Strong, psychological story (that's a bit dark) that does a very good job of maintaining interest in the game all the way through.
http://www.gog.com/en/gamecard/evil_genius (RTS- basebuilding): Let's you play, well, an evil genius, building a lair (complete with devious traps), training minions, and sending them around the world to further your goal of world domination. The game has a lot of great style and is very amusing to play.
http://www.gog.com/en/gamecard/beyond_good_and_evil (Action adventure): Similar in style to Psychonauts, with an interesting world, excellent and quirky characters, and a strong story. Another game I'd recommend regardless of whatever your usual genre preferences.
http://www.gog.com/en/gamecard/age_of_wonders_2_the_wizards_throne and http://www.gog.com/en/gamecard/age_of_wonders_shadow_magic (TBS): Best described as a cross between Master of Magic and the HoMM series. Highly recommended to anyone who enjoys strategy games.
http://www.gog.com/en/gamecard/planescape_torment (RPG): Arguably the most well-written RPG ever made. If you enjoy RPGs with strong stories and that are much heavier on dialogue and choices than on combat then you need to play this game. Now.
