Harvesting Ingredients

This is really such a little thing, but if Skyrim improved on this it would make harvesting so much easier. Harvesting from plants for alchemy was never much of a problem, except when it came to plants like wisp stalks. They were slender and kinda difficult to target with your cursor. Of course, it only took about a second longer to actually be able to aim your cursor and target them, but when you're in a cave and there are dozens you are kinda absent-mindedly collecting as you run through the dungeon, it can kind of get a little bit bothersome. Really I'm thinking how much easier it would be if the alchemical plants' targeting area was just a little more within their general area instead of the precision it required in Oblivion. Again, it was only a problem sometimes, because usually the plants themselves were big and easy to harvest, but I do hope Skyrim improves this.

I completely agree; I think that for plants such as the wisp stalk the selectable area should be an outline of the plant, not just the exact pixels that encompass that plant.

I agree. In addition, it would be nice if there was an animation for gathering materials rather than them magically disappearing.

I hear what you're saying, but when you're trying to boost your skills in alchemy, this would get very old very quickly unless it is a very quick animation. The way it was in Oblivion (just a quick sound) was perfect for me.

As far as being easier to select on the screen? I'm all for it.

Quite possible, point lookout in Fallout 3 had a harvestable plant and the fruits was gone after harvesting.
I hope that plants will grow back after set a time, not that you have to be away in three days for it to happened. You live in Skingrad and always fast travel out and inn because you don't want to reset the countdown for the plants.
