Has Bethesda learned from past mistakes?

Morrowind had that strange alien feel to it compared to Oblivion and people loved that.

OT: Part of the reason I would like a Bethesda Star Wars game.

I think they've already proved that they've learned quite a lot considering what's been said and what we can see in FO 3

You really have to look beyond the TES series for a more accurate prediction on Skyrim. Fallout 3 already showed that they have payed attention to the issues people had with Oblivion.

Exactly, I was very impressed by Fallout 3 how it dealt with all sorts of issues Oblivion had: FO3 has better level scaling (no raiders in power armor at level 20), more unique dungeons and loot in them, choices in quests, NPCs interacting with the environment more in their AI schedules, 'random' encounters out in the wasteland, etc.
