So what else can I do?

I'm only at level 46 iirc and I still have not maxed out any of the crafts.

Are any of the side quests really good or are they just. . . go talk to this person or go fetch me a sammich?

Which begs the question...

Has your character gotten married? (But that is a quest because it involves doing stuff. Sadly, there are no sammiches in Skyrim. But your spouse will cook for you.)

Related to love in Skyrim, did you do the Mara quests? The Dibella quest?

Yeah, the side quest are basically talk to the person go get something from a dungeon then get like 750 coins then repeat. You could go make a house with Hearthfire or do the vampire side of dawnguard.

There are a few unmarked quests you could do such as the Pale Lady. Also, you still haven't done alot of the daedric quests like the werewolf one at falkreath and the dawnstar one with the nightmares.

You need to RP friend.

It gets boring making a new character just to do all that stuff again.
