Well as far as characters go...amges are pretty weak at the begining....the easiest kind of character to play is a warrior.

The most important thing to do when starting out is to pick a weapon skill (or destruction) and stick with that....then join the guild that fits your character (mages, fighters or theives). Do some quests for them and level up some and you'll be on your way.

Its when you start swaping around what you are doing, or try to do things that arent for your character, or too high levelled that the start gets hard.

Little hint: Dark Elves resist fire by 75%. Switch to another element for greater effect. Because I think I know where you faced that mage bandit. :3

Mages can be difficult to play even for the most experienced characters, so starting off as a warrior as some others have suggested will help you out. At least until you get a feel for the game and get your feet wet.

Also, to reinforce what some others have said, make sure that with your warrior, you use a weapon he is suited for. You mention liking to play as a Nord, so if you go that route, you''ll have a lot of weapon choices. They receive a +10 bonus to Axe and Blunt Weapon, so those would be great ways to go. Nords also receive +5 bonuses to Long Blade and Spear. You would also get a +10 bonus to Medium Armor and a +5 to Heavy. I'd suggest going with Medium Armor early on, but later, develop your Heavy Armor skill as high end Medium Armor is practically nonexistent. (At least as compared to high end Heavy Armor.)

Joining the Fighters Guild is another great tip if you go the Warrior route. The early quests aren't very difficult and will give you a great chance to get your feet under you and gain experience.

It's important to improve things at the human end too. ;) Practice moving the character around especially. Get used to it so you are agile. This helps a lot with positioning and dodging. Mages aren't nearly dangerous when you're dodging all their spells. You just have to get the timing down, and that will come with practice.

In-game, be prepared for danger. Don't go anywhere without a couple of good Restore Health potions and a scroll of Almsivi Intervention or Divine Intervention. You should be able to pick all those up in Balmora Mages Guild (maybe not Almsivi Intervention, I can't remember exactly, but the Temple ought to sell those anyway).
