Paralyze disenchanted from any weapon can be applied to any. You can only apply two enchants on one weapon if you have level 100 enchanting and the right perk.

Absorb stamina is a nice thing to have on a two handed weapon because you can do more power attacks. Of course eating veggi soup will produce the same result.

Honestly, my advice is to try stuff out. Skyrim is a very "forgiving" game, it's difficult to completely screw up your character, and making one weapon that turns out not to be as good as you hoped, won't ruin your game, you can always sell it and use the proceeds to buy a new sword (or supplies to make it) and try something else. I personally find absorb health to be useless for most of my characters, other people love it. Try not to worry about making the perfect gear.

I enchant weapons using only one criteria: How pretty is the color on the enchanted weapon. So my character generally favors the lovely lavender of soul trap on her bow, or the soothing forest green of damage stamina. I think I'm in a minority however. . . .

In general, absorb health is a fantastic choice for two handed weapons or dual wielding, to make up for not having a shield.

I have enchanted a NordiHero Greatsword with fire and stamana damage for some nice flashy effecs. Damage stamina will be easier to find at early level at merchant's vendors, and absorb health a bit later. There's probably some areas where you might be able to find some unique items with those enchants, but I can't think of any off the top my head

Paralyze is possibly the most useful enchantment you can ever add to a bow but it may be overkill for a sword. Absorb health and stamina is possible more useful there. But the best way to tell is to try it and see...
