I really like the vanilla female Nord faces but I don't care much for Nords. I like Dark Elves but they're too ugly in my opinion. Is there a way I can create a Nord race but give it Dark Elf skin textures and pointy ears?

Have you tried using http://www.nexusmods.com/skyrim/mods/29624/? It lets you save faces you've designed in-game as presets, and you can then load those presets onto other characters. You can do this across races, too, so you could make a nord you like, save it as a preset and load it up on a dark elf character. From there you can customize the skin tone and ear pointiness to look more like a proper dark elf but with nord features.

I've used it to make Dark Elves which look more like High Elves, since I also think the Skyrim's Dark Elves don't look great.
