About the Wood Elf, the starting skill differences are negligible. Your focus will be archery+sneak anyway, so both Khajit and Bosmer are a good choice. Racial abilities might have a bigger impact on the gameplay, though. Khajiit have a pretty good one (seeing in the dark), I find it more useful than Bosmers'.
