RP helppicking a build

SO im trying to make my "first" RP character and im having a hard time picking a build will it be better to pick one or make a backstory and pick a build close to that? i know i want it to be dragon focused (studding them, killing them etc) this is on pc so i can mod

First there is the http://theskyrimblog.ning.com/group/character-building/forum/topics/character-build-the-aspect-knightso a dragon priest-battlemage, don't know how to rp him and magic is equipped to the shield hand so that makes switching from melee to magic cumbersome

Then there is the http://theskyrimblog.ning.com/group/character-building/forum/topics/character-build-the-dragoon light armor 2hander wielding badass The http://theskyrimblog.ning.com/group/character-building/forum/topics/character-build-the-revakriid is more or less the same

The next two are less shout based and are more killing evil things in general, http://theskyrimblog.ning.com/group/character-building/forum/topics/character-build-the-demonhunter i feel can be changed to a dragon hunter and is an archer which is my favorite archetype but crossbows seem a bit clunky and i imagine this character is quite cruel and works by any means necessary

And the last one is (warning music!) http://theskyrimblog.ning.com/group/character-building/forum/topics/character-build-the-knight?xg_source=activity the classic dragon slayer but has no range ability and i have never gotten any levels is speech and it quite close to past non RP characters (being a good guy) but seems quite easy to RP

I play something very similar to the Knight, which is actually a very fun way to play. I have Lydia as my squire (playing on legendary so I need a tank) and we walk around Skyrim saving ladies in distress, helping the poor farmer get his daughter back from that troll etc etc. I also do the Companions, however I try to ignore the werewolf part, in that I have never willingly transformed (my character was shocked over what happened the first time and now wants to cure himself and the others).

It's fun to try and RP all the small parts in the life of a knight, like always choosing the most well spoken reply in a conversation.I fight honorably, if in one on one my enemy kneels Inwait for him to get up. I also have very heavy loot restrictions, I do not pry armor of a dead enemy if the material in itself isn't worth selling (honestly, imagine that fur chest piece IRL, all sliced and sticky), nor do I take more than me and Lydia can carry (from a realistic standpoint). Little to no looting in tombs as it is disrespectful towards the dead etc.

This might sound boring and I thought so too at first, however this turned out to be the character that lasted, it is wicked fun RP and not being a hoarder and having barely 2000 gold at lvl 17 is refreshing.

My skillset is

One-handed, I primarily use swords.

Heavy armor, no daedric otherwise I tend to stay clear of orcish as well as other huge impractical armors.

Block.

Restoration, for healing myself and Lydia, and for turn undead

Enchanting, it's the educated crafting skill.

Smithing, currently just up to steel, not sure how far up I should go i have no interest in crafting only improving.

Speech, both a skill and a way to play

Possible future skills are two-handed for greatswords, and illusion for courage, calm and the likes.
