Honorable ThievesAsassin.

Is there any acts that your Thief/Assassin did? It's can be anything.

For example:

My current Nightblade, Saphire Derohst (a female Breton), is a Thief/Assassin who only steals from rich folk, BUT will once every couple days, give 500 Septims (reverse-pickpocket) to all beggars of Skyrim.

What do your (by a guard's word) non-honor Thief/Assassin does that is Honorable?

Hmm, I like your approach....

I usually play a thief who undergoes a transformation during is life. He starts out as dishonorable, sort of running with the wrong crowd, but then finds out that he is actually a Nightingale at some point, and undergoes somewhat of a moral shift.

...Your idea of starting out acting honorably, would be more of a challenge. I am interested to see how others respond.

Oh, sorry, I misunderstood. Do you mean just to do some honorable things from time to time?

The Thieves Guild in Oblivion was generous to beggars, as they were the best sources of information on who had the wealth, or any other topic. So paying them for their assumed/future help, (giving them their cut, if you like,) is quite in-line with being a Thief. You haven't gone soft, you're being practical.
