I want to do the main quest as a minotaur, I have the unplayable mods installed, but when i walk up to the prison gate valen dreth just stands in an idle stance and doesnt say anything. I have tried switching to playable race and then back but it changes them into big messes

Use the Unofficial Patch, which alters certain quest events so that mod-added races are able to progress?
