I've leveled up to 5/5 with several trainers and I've leveled up my character but when I talk to a trainer it still says 5/5 so how do I get to the next level?

You're only allowed 5 training sessions per level including all trainers.

You can only re-train every 25 skill levels, I think. So, in the 25-50 area, you can train five times with that skill, then in the 50-75 you can train five more times.
