It will depend on the weapon type (from previous games experience).

Say a sword does 25 damage, a crit hit might only be 34 or something similar to that.

Searched a few other sites (starting with UESP) and couldn't find this out. It'd be really nice to know, though not really necessary as I'm already content with the observed effect of critical damage doing quite a bit more than normal. Knowing the exact amount would just be a treat to sate my curiosity.

Didn't see it mentioned in Prima guides or anywhere else.

Guess the only way to find out is by waiting for the creation kit and check the forumla with it.

would be nice to know to see if certain perks like critical charge or the sword perks or weapons that increase critical chance are worth it
