Fallout companions always were really shallow and uninteresting when compared to some NPCs and especially to companions of other games. Bethesda has not been really creative with them at all. I hope that changes, but I can not really see Preston or Piper as being closely overly appealing. They just do not react often enough to the player's action and I never saw them as much more than an extra quest and firepower.
I would welcome it, if they engaged the palyer more often, commented on actions more often, hand more opinions and were weaker in combat.
Depends on the character. First one, almost definitely but we'll have to see who stands out.
As uaual i will likely wait and see. Totaly depending on wether the romancable companions and npc's are intersting or not i might role into a romance or not. Also should my second playthrough be a male SoleSurvivor, then he will likely be a skirt chaser. wasteland is a lonely place after all.
I doubt I'll fool with romance much, if at all. Video game romance is seldom worthwhile, and while Bethesda has it's strengths this sort of thing isn't one of them. Also, even if I was interested in that sort of thing I'd have to wait and see what happens with the whole family thing. Doubt any of the other companions (and Piper is the only potentially suitable one I know of at this time) would make a better companion than a Courtenay Taylor voice acted custom created spouse.

Good thing we already know it's not. It seems to be much more fleshed out, whether it is "good" is yet to be seen and will probably vary wildly based on individual opinions.
I am not sure about romance? Knowing so little about the story, I plan to wear my ring and look for the spouse and baby. I'll have to play the game first and see what happens.
Video games have X number of hours available for "romance". As a result, the "romance quest" devolves down to four conversations and picking up the tab for lunch, or The Labors of Hercules. Either way it always ends with "Fancy a roll in the hay?" "Sure, just as long as we are done in time for me to make my 2 o'clock appointment."
I do it at-least once, because i think it will be hilariously bad.

Seriously, though, it all depends on the characters and the quality of the writing. May be great, may be cringe-worthily awful. Time will tell...
