I haven't played in a long time, don't remember having this issue before - but hey, my memory's not what it used to be.... I have two monitors; Skyrim opens on the primary screen, but clear up in the top left corner (in windowed mode - I don't like games fullscreen....)

I'd like to be able to add something to an .ini file to center the window on the monitor. Anyone know if this is possible? If so, could you provide the lines to insert, which .ini file to use, etc?

Try that:

Hit Ctrl + Alt + Delete, start task manager and then when you are out of Skyrim, drag it where ever you want.
