I would like to see animals being sold sort of like furniture was in Oblivion, where you buy the deed and it's sent to your house. This could be a cool way to guard your loot from thieves, especially if you could purchase stronger pets like a bear or something. Mudcrab guards would also be awesome, even if they just served as scenery on your property.
