any advice you can give me as to how i can begin to roleplay?

Just create a character of your choice and always go with the "what would my character do?" no matter what.

Instead of planning the level multiplyers and doing every guild and everything with a single character and so on, aka power gaming.

Unfortunately, many quests in the TES games are rather linear and not that suitable for roleplaying IMO, as they lack different means to complete the task. So this is why you pretty much have to ignore a lot of quests to stay in character.
