I've had 1 infamy for a few days. I've paid all my fines and prayed at the temple and It's still there. I just struck a guard and paid the fine,, now I have two.. How do I clear them from my stats??

The only way to eliminate infamy is to make the pilgrimage (first quest) of the Knights of the Nine DLC. You can sort of 'balance' it by gaining points of fame by doing good things.
