Jedi Build

I am going to do one last full play through before Skyrim comes out. I have been playing around the past couple of days and just haven't been able to settle on a character. Since I am a big star wars fan and waiting on SWTOR to come out I thought a Jedi Themed character would be fun but I need some help on the details.
Here is what I have come up with so far.

Race: Nord ( Just like the look of them but I'm open to suggestions for a different race that would work better)
Birth sign: Not a clue I usually go with the thief because I like the bonus 10 luck)
Specialization: ? not a clue
Major skills: 1) Blade, lightsaber
2) Light armor
3) illusion
4) restoration
5) Mysticism
6) Athletics
7) Destruction

This character most likely isn't going to be optimal or min/max, I've already done several runs using the minors and setting up the majors so you get +5 every time. I don't feel up to doing a tedious run through so if there are any mods that just give you plus 5 to an attribute if you level it 1 I would appreciate it.
Basically, if you were going to make your perfect jedi what would it be? Suggestions to the build and reasoning behind them are greatly welcome. Also any back story or role play ideas you have are great. Lastly, any suggestions to make the build not crippled when leveling would be amazing.

I would use alteration instead of destruction for a jedi (shield spells as like a force resistance type feat).
Destruction is more of a sith skill in my opinion for lightning/ damage health, fatigue. I'd take heavy armor if you go the sith route since I'd imagine a sith would wear heavy intimidating looking armor while a jedi would try to be more agile. I think the rest of what you got looks good for a jedi type.

You could replace Light Armor with Acrobatics. If a robe was good enough for Yoda, it's also good enough for you.

Specialization should be Magic if you want to be more of a Jedi Consular and Combat if you want to be more of a Jedi Guardian.

For birthsign I would probably take the Mage.

i'd say wear a robe, i don't remember jedi wearing any armor, i'd also say switch out your birthsign with one of the magicka based ones, probably mage. Athletics is kinda useless, i'd switch it for acrobatics...cause force jumping and all that

since acrobatics is an easily leveled skill i wouldnt put that and sine your starting out with this char id suggest atleast light armor(i prefer mithril personally) or else youll get cut to pieces or turning into a pin cusion(spell check) blade definitly illusion mysticism alteration light armor restoration and block for the more themed type jedi char can use a claymore. and then if those arrows start getting overly annoying you can always switch to sword and sheild. and if you want to sith destruction in place of alteration and heavy armor (can definitly see a sith in daedric anyone else getting shivers?) in place of the light.

Here's my notion of a Jedi. Take it however you want:

Race: Bosmer - Any will do, but to me a cloaked and hooded Bosmer just screams 'Yoda.' I also think an Argonian or Khajiit would look cool in this role.
Sign: The Mage - You need a magicka based birthsign here to act as his midichlorian count.
Favored Attributes: - Intelligence & Agility - If you stay Nord consider Endurance, Willpower or Luck, but smart and quick fits the race I've chosen.
Specialization: Combat - Mage works too, I would take combat just to insure that my Blade skill rises as swiftly as possible.

Majors:

Blade (of course)
Mysticism
Restoration (for the healing)
Acrobatics (Force jump)
Illusion (Jedi mind trick)
Speechcraft (Jedi are warriors and diplomats)
Block (For those pesky incoming blaster bolts swords)

I doubt this will be your last run ever in Oblivion, you may say it now but you will eventually return to Oblivion at least once after Skyrim.
