Altmer live for thousands of years, Bosmer live a bit shorter because of a "harsher" lifestyle and Dunmer rarely make 500 (though potentially thousands), because of a truly brutal lifestyle (Morrowind has been in a constant state of civil war since it was founded, you know one clan against an other in ancient feuds and rivalries...)
