...Hokay, exaggerated fangirlism aside, no one can tell you what to play. If the looks of the various races don't decide you, try looking the races up on the Oblivion wiki, and get a feel for what the lore about them is. If you want a race that feels rough-and-tumble, Orcs are a good idea and Altmer are a bad idea. If you want to roleplay being the only magician from your home village, perhaps you should choose a less-magically-oriented race like the Redguards over a more-magically-oriented race like the Bretons.
That said, I don't recommend (at this stage) choosing any race because you think it will give you a gameplay/mechanical advantage. The way they've been talking so far suggests that any stat differences at the beginning can be made up relatively quickly.
Khajiits are generally a more stealth-oriented race. They get along really poorly with wood elves (call it a sibling rivalry) and with dark elves (being enslaved does sure put a chip on your shoulder), but are jokesters and flirts in general. Seen by some of the more prosperous races as "beast people", they have a very insular culture that places a high value on secrets. They come in a wide variety of shapes, from housecats to giant tigers to forms indistinguishable from wood elves, determined by the phase of the moon they are born under, but we have so far seen no more than one variety per game. They do, in fact, revere Azura highest amongst the godlings of the Elder Scrolls universe, and believe themselves her favored people.
Last word: Play something that you will have fun playing.
