Late game pure-mage gameplay with minimimum mods?

I've played from Daggerfall to Skyrim, and after beating Skyrim as a pure mage (which, BTW, is very fun and playable, and I actually relied on destruction as main damage source), I'm tempted to replay either Daggerfall or Morrowind, as a pure mage, because:
1. I've never played them both as a pure mage, I always end up using lots of melee as main attacks, because although I love playing as mages most in all RPG, in MW COD forces me to collect and use all kinds of awesome weaponry and armor, so pure mage in robes with no weapon was no fun to me.
2. I've never finished them both, with DF I think I've played as far as reaching the second last dungeon, and with Morrowind I always quit the game at the six trial, which always occur before I finished the fourth one due to high reputation.
3. Magic is so much fun with DF and MW!

However, from my experience and knowledge, playing as a pure mage in MW brings tons of trouble, like very very weak spell damage, extremely high magicka restriction (spell casting cost doesn't scale), high level mobs especially those in both expansions have ridiculously high anti-magic protection, like spell reflect on...boar riders?

There is one final problem with playing MW: MODS. Choosing mods to play is a nightmare, because there are just so many to choose from. I think the time spent with MW there is at least 60% spent on checking out and testing mods. In the end the game just loses its appeal due to burnout...

So, is it possible to play MW as a pure mage, with minimum mods (better heads + BB + some simple graphical improvement mods, no GDC, no "spell system balancing" mods), with fun?
