Mice are very personal preferences, ideally you'd want to try out a few different models, though that's not always easy (or cheap). If you can go into a store and actually hold them in your hand, and just get a feel for them, then that's a huge help.
Mice I can personally recommend are the Roccat Kone XTD, the Razer Deathadder 2013, the Corsair Vengeance M60/65 etc.
Mouse pads are also a fairly personal preference in terms of surface, depends how you want the mouse to interact with it. Some are very smooth and floaty, others are slightly more grippy, giving a more controlled feel. I'd recommend getting a large-ish one, because then you've got extra space if you need it. Better too have too much mousing area than not enough!
