IMO, the depiction of orcs in Oblivion with piggish faces, tusks and bright green skin was pretty similar to what we have already seen many times over in fantasy literature, art and RPGs over the past few decades.
I have not gotten very far yet in my Morrowind playthrough to comment on the Morrowind orcs.
In the Peter Jackson LOTR films, he tried to do something a little fresh and take the orc appearances in a new direction.
I would hope the devs would not directly copy the LOTR orcs, and obviously they will not do that. TES has its own lore and racial motifs.
That said, I would love to see the Skyrim orcs updated to be a little bit more gritty and "badass" as jack254 puts it. They can still be just as intelligent, contributing members of Tamriel society as they were in past TES games, but their physical appearance in Oblivion was IMO the stereotypical cuddly piggish green-skinned D&D orc that has already become outdated in 2011.
EDIT: I have never played WOW and in fact, I can't think of any non-TES RPG I've ever played that had orc characters, so forgive me if there was some wave of LOTR-copycat orcs that tainted the RPG community and turned everyone off to gritty updates for their orcs.
