I'm level 18 now using a warrior and I've already leveled up my strength to 100. I can't level anything up higher than this. I was wondering if there's a mod which lets you go further than 100, but which does not require you to start a new game. Any other leveling mods which change the leveling system are also good as long as they also do not require a new game.

You should be able to use GCD with a saved game, the readme discusses how. GCD uncaps attributes so they are not limited to 100 max.

Yeah. GCD calculates your attributes based on your skills.

One question, because I've searched but couldn't find the answer in the readme, how will my attributes increase? Since there will no longer be a 'level up' screen how will I increase my att?

Well, you basically just train up your skills, like Enzo Dragon implied above.
