So I was just wondering what is the life expectancy of the elder scrolls universe?

Humans, ~80ish most likely. Tiber did live to 106, but that's pretty long for humans. The count of Skingrad isn't suspected of being a vamp, due to a rumor that he's a recluse wizard. So it can be assumed that human wizards are pretty long lived too.
With mer, their lives tend to have much more variation. Peasant dunmer live to ~120ish years, which can be guesstimated that it's similar for the other mer. Royalty, if Barenziah is any indication, live up to 400-500 years. Mer wizards will live as long as royalty or longer, generally to 1000. Dyviath Fyr, however, is a giant freaking weird case, as he is practically as old as recorded history, and older than the Tribunal.
Orsimer (orcs), despite being mer, are cursed with svck. I think I heard 60 years is pretty long lived for an orc, but I forgot where I heard this. You can blame their shortened life on Arkay for trying to screw over the nords.
As for the beast races, unknown. I suspect lifespan for the khajiit depends on what one grows up as, with The Mane being the longest lived. However, I also suspect khajiit die early often, due to drug addiction. As for argonians, I'm only going to assume it's around the lifespan as men or peasant mer.

I would also like to note that the altmer, in general, will be the longest living race out of anyone. This is due to intense amount of eugenics they practice and the hardcoe amounts of perfection they demand from a newborn.

Wait wait wait! What's this? Of the universe itself? (I'm going to assume you're referring to the Mundus.)

Well, aside from the fact that it's about to go down the maw of a huge bloody dragon... pretty long, I'd say.

In two perspectives: A) yeah, Alduin probably won't succeed, and in that sense the Mundus as we know it will continue for at least a little while more. Who knows what the result will be, though. Nobody's ever actually stopped the big dragon man before, as far as we (I) know. Could be that escaping this destruction could cause a more final destruction of some kind. Breaking the cycle of kalpas.
B ) Even if the Mundus is destroyed - whether by Alduin or by some other catastrophe - as long as the cycle of kalpas continues and the Arena is recreated, the TES universe will continue. Not as we know it, but it will continue.

(A postulation: the Leaper Demon King's goal was to hide stuff until there was too much for the dragon, and Alduin got a stomach-ache and had to halt his meal before it was complete. He got cursed, yeah, but what if he figured out a way around the curse? It seems likely that the PC in Skyrim will be successful at halting Alduin's voracity - well, ok, more likely his consumption and not his appetite - so what if the Dovahkiin himself represents the last bit that tips the scale of what Alduin can/cannot stomach? If Dagon learned to use the destruction of one thing to save another?)

I dunno. Am I even using these terms correctly? Sometimes I feel like I'm just spouting through my nose.

As for how long Mundus has been, Dawn + Merithic + 4000ish years = [censored] who knows? Before the first era, time was very wonky.

Kaplas are more like world-reproctive cycles, so they don't count for life expectancy.
