I run a community game server on a Linux host. No video card, no keyboard. You have to log into it remotely with a text console connection. It hosts some older games that have Linux dedicated servers. We started with Tribes 2 and moved on to games like UT2004 and ETQW. Our team plays on Windows but our server runs on Linux. Some games are administered with text config files, while others are managed through the game client and yet others use a separate web console interface.
A good dedicated server has good administration capabilities, and these are often overlooked by those focused on game play and eye candy, because you don't see problem players until general release, when it's too late to do much about them. I'd like to see early release of a dedicated server with some attention paid to good administration capabilities.
