Years ago the big creature mod was giants and well im just wondering if theres any really good ones out there.

Well, PirateLord's Creatures *pleatiksertcorrectnumberhere* is probably the most widely used. It adds a lot of high quality creatures, but I cannot recall the current version number Perhaps 13? Also R-zero is working on creature mod that looks awesome, but so far released only http://www.nexusmods.com/morrowind/mods/43496/? (but it is pure awesomeness). Besides these, I know only about mods that add either just single new creature (Silt Striders are in Vvardenfell for example), or just new variations of existing creatures (not sure about examples as I do not use them, but they are somewhere out there )
