Looking Herbalism Mod

I'd imagine there are several mods for oblivion, like Morrowind, that cause harvested plants to change appearance.

Can anyone recommend a favorite?

You're looking for Harvest Flora mod and AFAIK that's the only mod that does that. Search for it at Nexus.
