As ^this page^ says, the lunar weapons respawn. My question is "how often"?

Also, any and all information about item and resource respawns in Skyrim would be great and awesome.

plants, ores, or any possilbe thing you can think of.

Even the things that DON'T respawn.

The cell resets every 30 days. You have to be away during that time for it to respawn.

Most areas respawn after 10-15 or 30 days.

Any area. In a dungeon, outside a dungeon, a cell. You have to away from them in order to reset.

They're split up by cells. I don't know how exactly, but they are.

I am pretty sure a Cell is every fully loaded area. I.E. The bannered mare is its own cell from the main of Whiterun, which is a cell itself.

Each Area that's inside a load door is a Cell. Also, from the Creation Kit, a cell is about ~1000 square feet (roughly 30-40x30-40) if it's outside. (Estimate)

...... And areas don't respawn all in one go, bang, but bit by bit in a natural way, same with the re-population of cleared out areas, go back shortly afterwards and you will see one or two of the population already there, they don't stay completely empty for long. Similar with plant ingredients.

Shops such as Alchemy seem to restock every day or one or two days, and it's said according to Radiant usage or requirements by the player, not quite a respawn, but kind of.

I'm afraid they do. The respawn activation trigger is set to a limited timeframe. It fires when that time frame has expired. It does not filter in bit by bit.

Well, locations that I've cleared out, they start coming back after the time frame... but definately not all in-one-go, location all suddenly full again.

It is a one shot deal. However, a cell can and will reset with less amount of enemies that originally.

Cells do not respawn gradually. That is an impossibility. What you might be seeing are different cells within a multi-cell dungeon respawning at slightly different times...if you happened to visit those cells at slightly different times.

That or visiting a cell after the time has expired, only to encounter fewer enemies and returning the next time to find a full house. Both times the timeframe has exhausted it's limit.
