Mod Organizer - Separate mods for different saves?

I've installed the MO so that I can start a new game with Mods that require starting a new game, but allowing me to keep the old saves clean and in tact, as it were... But how exactly do I do this? I mean... I'm the kind of person who doesn't save over other saves - I tend to create a new "save" each time I save... So, with one character... I'm at around save... 1000 and something? Should I delete some of my older saves, or can I still get around this whole thing with the MO regardless. And if I apply new mods to a new save, how do I then access the older save, without breaking the new save?

I've looked online but nothing I found really helped, to be honest.

Copy your existing profile to a new profile, add mods to the new profile, and start a new game. This way you can always go back to your old profile/character.

I hope I understand your question correctly.
