Mod Recommendations for an "Enhanced Vanilla" feel

Hey everyone,

Long story short, I spent a ton of time modding Skyrim previously and very shortly after I finished (and barely got into my first character) my hard drive fried and I lost everything.

This time around, I'd like to just enjoy the game instead of spending hours upon hours installing, managing, and troubleshooting mods. I would like to just install a few select mods that are real "must haves" without getting crazy, mainly focuses on improved graphics, bug fixes, NPC/AI, or other mods that you feel shouldn't be played without.

I have every DLC, so any suggestions or opinions that you all have for me would be greatly appreciated!
