I think these made the best case / most sense.
- Tech behind the game: The New Engine http://www.gameinformer.com/b/news/archive/2010/12/12/elder-scrolls-v-will-use-new-engine.aspx and they could for one give us the name of it and more information then just it's "spectacular." Though I'm inclined to believe whatever they got when visiting with Bethesda is what will go into the hub, did Bethesda show them the new engine while they were there?
- World Design: Skyrim is very different from Oblivion and for the casual fans that would be something worth showcasing. Like the weather of Skyrim with the supposedly uber-realistic snow fall. The plantlife in this harsh environment. And what that means for the various fauna of the region.
- Radiant Story: Something they don't need a video to talk about. Could just be a short 1 or 2 page write up on how this works, maybe with a few screens or concept art. Bethesda will probably be releasing dev diaries later with actual gameplay showcasing it.
- More about the Dragons: They could talk about the lesser dragons and unveil some new information about how we go about combating them, how they fight or choose to attack, when they attack, how difficult they are, and hopefully more concept art or better yet screenshots of them.
- Combat in general: After all it's a whole new system and we don't know much about it other then what the GI article had said about the two hand system.
- Reveal something about the game we don't know yet: Possibly have something to do with the ruins and the dwemer as they seem to have been hinting at them and telling tidbits of info about them in each other update.
I think the update on monday is going to be related to radiant story and the tech behind the game. The gi article says to visit the hub for more info on these things so we know at least one of the updates will be about radiant story and the tech. I think the monday update will be related to this.
I would assume that they would share more dev videos. Considering they've covered Todd and a studio tour, in-depth sound design vid, etc. The most likely scenario is that they are going to cover world design or graphics engine, something of that nature. But I'm up for anything, really.
So lets see most the updates to the hub have been videos. Well past the initial few that gave us the story and the dragon language game decipher thingy.

They talked with Mark Lampert about the sounds and audio in the game, revealed the new theme, centurion spheres, dragon shouts, and other info.
I imagine it will be yet another video(s) with someone when they visited their studios. It won't be about the sound/audio so it'll either have to be something else about the process of game design or just some screenshots and footage?
I think a likely thing they could explain is the new engine and it's capabilities. Showcasing the world in game. Like the weather, snow falling, wind, plants etc. It wouldn't reveal too much of the game and it would stick with their trend of revealing things about the game but not actual gameplay or too much info.
I hope for more concept art from the walls at their studios or maybe a screenshot or two thrown in there.
At the most, I see them revealing some concept art on something. Maybe concept art concerning dragons?
I don't expect them to give us screenshots until towards the end of the Hub's coverage. So like the end of January.
Well, we'll be getting a gameplay vid in a month that has an "r" in it, and since E3 is in June (doesn't have an "r"), I'm expecting it before then. Perhaps in March during PAX East.
So yeah, we're definitely getting screenshots before E3.
Gi said to expect more info on the in game mechanics, combat and technology so it should be something about one of those subjects.
