Ideas for more fun/cool stuff other than just fighting, fishing and cooking for instance, hunting.....

Hunting is cool. Actually, that would be a good quest idea. Nord hunter takes your character on a hunt for vicious Skyrim creatures.

Hunting definitely... I don't know whether it could possibly ruin the game, but maybe I'd like to see PC's having to eat once in a while, or have fatigue work (either to some extent or add something new) like in Daggerfall so you would actually run tired if you didn't sleep once in a while (or cast a spell).

I'm fine with not having things like smithing or tailoring in the game as a PC skill though....!

Having to rest would be cool, I wouldnt mind smithing and such but make it a minigame where the better you do == the better quality stuff you made. Also, what about real darkness outside at night, in Oblivion you could still see a mile away at night outside. Proper darkness might add to exploring/camping for the night strategy.
And maybe some cool cutscene for when you rest, anything but the cheap lil bar they show.

Yes to darkness. I always turned the brightness slider down so I had to use torches (or spells) in caverns and when traveling the roads by night. I would also like to see the return of more light sources: candlesticks, lanterns etc. Cutscene for resting is not a bad idea at all.

Oh Yeah, Way more voice acting, I would be willing to buy(for a super cheap price of course) DLC of just different generic lines of voice. After about five to ten minutes in any town they all just start to repeat themselfs, sometimes its ridicules, like multiple people in a row with the same voice or same lines.

More ambient creatures as well, for instance like rabbits and tons of other stuff, if you walk through a real forest you will see tons of squrrills(sp) and birds and rodents.
