There's currently only ONE place in Ohio nearby that has ONE copy of Morrowind for XBOX. (And it's the one with +extra content or w/e, it's like 45$)

I own a 360, and I have a few games from Games on Demand (Black, Ninja Gaiden Black, Halo: CE), and I've been pondering lately...

Anyway they'd release a Games on Demand version of Morrowind for us? And would you buy it?

If it was GOTY, absolutely. Because, while I do still own a perfectly functional copy of Morrowind for the Xbox, it doesn't run as smooth as it could. When they make Xbox originals "on demand" they make them more compatible so it would run better.
